Dry; ripe, chewy tannins; refreshing acidity (3.71 pH). Tannins provide notable structure without being obnoxious. Balanced, chalky, calm in the mouth with touch of austerity, but evolves into red-and-black fruit easy drinker. Medium-plus body. Classic left-bank blend of 58% cabernet sauvignon, 38% merlot, 4% petit verdot. Vinification in temperature-controlled stainless steel and wooden conical vats. Aged 12 months in 50% medium-toast oak barrels (20% new, 30% one-year-old) and 50% in stainless steel tanks. The regimen allows for both fruit freshness and subtle oak. 13.5% ABV

Château de Pez is located across the road from Château Calon-Ségur in the northern part of Saint Estèphe. It is owned by the Champagne house Louis Roederer. Created in the 15th century, Château de Pez is the oldest domaine in Saint Estèphe. The Pontac family, the creators of Haut-Brion, put in the vineyards. The domaine was the property of the French state after the French Revolution, then was owned by a succession of families until Louis Roederer’s purchase in 1995.

The estate is located west of the town of Saint-Estèphe and consists of 104 contiguous acres, 94 under vine (descriptions of exact acreage vary). The vineyard is on a high plateau with well-exposed slopes. The wine is racked every three months during its aging. At six months, it is fined using egg whites. There is no filtration at bottling.
