Costeval is from the most westerly part of the Côteaux d’Aix-en-Provence appellation. Vineyards lie in the heart of the Alpilles mountain range, exposing vines to abundant sunshine and cold, dry Mistral wind. Vines are planted in stony, clay-limestone soils that concentrates delicate lime and red berry aromas and flavors and minerality. Grapes are harvest at night to ensure freshness, then are gently pressed and vinified at low temperatures to emphasize aroma and fruit purity.
Famille Ravoire Costeval Coteaux d’Aix-en-Provence Rosé 2021 is fresh, crisp; good ripe red fruits. Pure and finessed effort. Works nicely as an aperitif.
