Extra dry; good acidity; no tannins. Light body. Fine, persistent bubbles. Blend of 85% glera, 15% pinot noir. The pinot noir contributes a harmonious, tasty red fruit element. Made using traditional prosecco formula. A dry base wine, which must be 85% glera grapes is fermented. The secondary fermentation—the part that makes the bubbles—occurs in pressurized stainless steel tanks. The wine then ages in the tank, allowing the bubbles to develop and integrate into the wine. The wine then is chilled, filtered, and bottled.

“Fiol” is a term of endearment for a young man, originating from the old Venetian Republic language of the 1400s. It is similar to “son” or “chap” in English. Giovanni, Gian Luca, and Pietro are “proud sons of Veneto.” The friends grew up together around Treviso, then took separate paths to London, New York, and Hong Kong. A shared vision of FIOL brought them back together in 2011.

FIOL winemaker Marzio Pol

Marzio Pol is the winemaker. He is highly experienced with more than 50 harvests. He oversees all of FIOL production. In addition, Marzio works with his son, Francesco, in Pol & Pol, an oenological consultancy. Marzio often is referred to as “a winemaker’s winemaker.”

FIOL Prosecco Rosé Millesimato 2021 is fresh, fruity, elegant, and fun. Blend of 85% glera—the minimum percentage to be classified as prosecco—and 15% pinot noir, which gives it a distinctive red fruit element. Ideal for a Sunday brunch or any time you want light hearted fun. Excellent as an aperitif and enjoyed chilled on porch, patio, poolside, picnic.
