Dry; lithe tannins, good acidity (3.38 pH). Medium body. Blend of 85% sangiovese and 5% each of canailo nero, mammolo, and merlot, all organic grapes. No added sulfites. Fermented with native yeasts. Aged four months in 79-gallon American oak tonneaux, followed by three months of bottle age before release. Of course, by my tasting it has some five years of bottle aging. It is made for early drinking, but held up well in my wine cellar. 13% ABV

Salcheto was founded in Montepulciano (Siena) in 1984 as a multi-crop farm. Today, it is a vineyard of more than 150 acres or organically farmed grapes. Sustainability is a central focus. Salcheto was the first company in the world to be certified in the Carbon Footprint of a Bottle of Wine. They were the first Italian vineyard to implement a Welfare Plan for employees.

The Salcheto effort to be environmentally responsible means Salcheto is completely energy independent, working off the grid by producing its own energy. The wines are certified according to the European Organic Protocol. They produce their own fertilizers. The wood for their barrels come from responsibly managed forests with FSC and PEFC certifications. They purify and recycle 100% of their waste water. They sort 98% of waste material at their on-site waste separation and recycling facility.

Salcheto Chianti Biskero, Toscana 2019 is simple, easygoing drinker with tannins that won’t disrupt your palate and lissome red fruits that will please it. Ideal for weekday meal when you want some wine with a little character but not an attitude. Organic grapes, no added sulfites, native yeast—all to the present terroir and sangiovese fruit rather than wine cellar legerdemain. Great quality-price ratio (QPR). Does not drink like a cheap red—well done, very affordable. Pair with roasted and grilled meats; roast lamb; slow-cooked beef; pasta al ragù; pastas with rich tomato sauces and mushrooms; spicy dishes; veal; poultry with riach, savory sauces; cured meats—charcuterie board; pizza; ribollita with leftover bread, vegetables, and beans; comfort food in general. Cheese—bold cheeses; parmigiano-reggiano, pecorino tascano, grana padano, cheddar, gouda, manchego, comté. $10-13
